Ingredients
1 3/4 cups of plain flour
1 tsp bicarbonate of soda
1/2 tsp salt
1/4 cup unsalted butter melted
1 1/2 cups of caster sugar
1 cup of mashed pumpkin
1/3 cup water
1/4 cup olive oil
2 eggs
225g dark chocolate chips
Method
Preheat your oven to 170 C and grease a 9 “ square tin with butter and baking paper.
In a bowl, combine flour, bicarb, and salt, whisk, and set aside.
Melt your butter and allow it to cool to room temperature.
In a bowl of a stand mixer, using the paddle attachment, beat the sugar, pumpkin puree, water, and oil.
Once mixed, stream in your melted butter until smooth
Add eggs one at a time on low speed.
Add the flour mixture in two additions on low speed until the mix is smooth and flour lump free.
Add dark chocolate chips.
Pour this mixture into your prepared tin and bake for 70 minutes.
Insert a skewer to make sure fully cooked and allow another ten minutes if not.
Take it out of the oven, allow it to cool completely
