Coco pop peanut butter cups
Ingredients
Base:
70g coco pops
187.5g of melted dark chocolate
Peanut filling:
30g of butter
120g peanut butter
20g brown sugar
62g Icing sugar
Topping:
40g of dark chocolate melted
Method:
Add coco pops and milk chocolate together and stir.
Place into your cupcake moulds and using the back of a spoon to lightly crush and pack them down around the sides.
Leave in the fridge for 30 minutes to set.
Meanwhile, make your peanut butter filling, add peanut butter, brown sugar, and butter together in a small pan, and heat on low.
Once sugar has melted stir in your icing sugar in two parts.
Stir until all icing sugar has dissolved and your peanut cream has thickened.
Leave in the fridge for 30 minutes to set.
To assemble your cups scoop 40g of peanut butter mix into each of your coco pop cups and flatten.
Melt your dark chocolate and divide it into 6
Place back in the fridge for 10 minutes to set the chocolate.
