Port Douglas Lamingtons
In this article featured in 2021s Port Douglas lifestyle magazine. I created a traditional Aussie recipe using local Far North Queensland produce. Focusing on Australian finger limes as the main character, I used these tiny zesty citrus jewels to create a finger lime curd. Piped into Little pockets of sponge alongside a layer of vanilla custard, drenched in white chocolate ganache and coated in toasted coconut, a tropical twist on the Australian classic.
