Red velvet white chocolate cookies
ingredients
115g unsalted butter softened
150g light brown sugar
50g caster sugar
1 large egg
1 tbsp milk
2 tsp of vanilla extract
198g plain flour
21g cocoa powder
1 tsp bicarbonate of soda
1/4 tsp salt
1 tbsp red food colouring
1 cup of white chocolate chips
Method:
Preheat the oven to 160 degrees and lightly grease a baking tray and add baking paper
Beat softened butter and sugar together until creamy
In a separate jug combine milk, egg, vanilla and colouring and stir.
Add the liquid to your butter and sugar
Stir until fully incorporated
Add 3/4 of white chocolate chips
Roll into balls weighing 50g each
Keep in the fridge for at least 1 hour
Bake at 160 for 12-15 minutes
Add white chocolate chips to each cookie, let the chocolate melt as the cookie cools.
