Mars bar cookie recipe
Ingredients for 14 cookies
112g unsalted butter, melted until browned and then cooled
100g brown sugar
75g caster sugar
1 egg
1 egg yolk
half of a vanilla bean scraped
175g plain flour
1g baking powder
1g bicarb of soda
170g mars bar cut into small chunks
Method:
Melt butter until browned, let it cool
Add both sugars and whisk
Add whole egg and yolk and whisk again
Add the scraped vanilla and stir
Combine dry ingredients together in a separate bowl and then add to the wet mix.
Stir until just incorporated
Add your mars bar chunks and combine
Place dough in the fridge for 2-4 hours
Portion the cookies at 50g each, you should get 14 balls
Bake at 150 degrees c for 10-12 minutes or until cooked
Remove from the oven, add more mars bar chunks on each cookie and a sprinkle of sea salt
Allow to cool and enjoy
