Pavlova
Ingredients:
4 egg whites
250g caster sugar
375ml cream
1 banana
1 kiwi
1 x punnet of raspberries
Icing sugar to dust
Method:
Preheat your oven to 150C
Using electric beaters, beat egg whites till soft peaks
Slowly add your caster sugar and continue to beat until stiffer peaks form and the sugar dissolves.
The texture should feel slightly grainy but not too much. You can test this out by rubbing a small amount between your thumb and forefinger.
Spread the mixture onto a tray lined with baking paper. Using a palette knife, run it up and down the sides making furrows. This enables the sides to strengthen and prevent collapsing.
Place in the oven for 40 minutes, Once cooked turn the oven off and allow to cool down in the oven.
Whip the cream until soft peaks form. Peel and slice the banana, cut the kiwi and raspberries.
Once cooled smother with whipped cream and top with fresh fruit and icing sugar.
Eat and enjoy.

To make individual pavlovas, shape the meringue into 6cm rounds and bake for 10-15 minutes.
