IRISH SODA BREAD

Ingredients

2 cups plain flour

1 3/4 cups wholemeal flour

2-3 tablespoons of extra flour for dusting

1 1/2 tsp bicarb of soda

1 1/2 tsp salt

2 cups buttermilk

Method:

Preheat oven to 220C/430F .

Line a tray with baking paper.

Whisk all dry ingredients together in a bowl and make a well in the centre

Pour in your buttermilk and stir

When its too hard to handle with your hands, pour onto a floured surface and bring together

No more than 8 kneads are required

Transfer to a tray and score an x on the top

Bake for 20 minutes, turn the oven down to 180 and bake for another 20

Bake for a further 20 minutes or until the base sounds hollow

Transfer to a wire rack and allow to cool before slicing

Add butter and honey to your slices and enjoy.
