Dark chocolate banana cake
Ingredients
3 medium-to-large very ripe bananas
115 grams butter, melted
145 grams dark brown sugar
1 large egg
1 teaspoon pure vanilla extract
1 teaspoon baking soda
1/4 teaspoon table salt
1/2 teaspoon ground cinnamon
125 grams all-purpose flour
1/2 cup Dutch-process cocoa powder
170g dark chocolate chopped
Method:
Preheat oven to 170 and grease and line a 24cm x 13cm x 6.5cm loaf tray.
In a bowl mash the bananas, then add the melted butter and whisk.
Add the brown sugar, the egg, and the vanilla and mix.
In a bowl sift the flour, bicarb, cinnamon, cocoa powder, salt.
Stir the dry into the wet and add your banana and dark chocolate chips until just combined.
Pour mix into your greased tin and bake for 50-60 minutes or until inserted skewer comes out clean.
Remove from the oven and set aside.
Allow to cool and tip out onto a wire rack. Serve warm with butter
