Ingredients for cookies
1/2 cup unsalted butter softened
1/2 cup light brown sugar
1 egg
2 tablespoons of maple syrup
1/4 tsp bicarbonate of soda
1/4 tsp salt
1/2 cup cocoa powder
1 1/4 cup plain flour
Ingredients for ganache
3/4 cup of milk chocolate
1/4 cup of double cream
mini m&ms
Method for cookies
Beat butter and sugars together until pale and creamy
Add egg and maple syrup and beat
Add bicarb and salt and beat again
Combine flour and cocoa powder in a separate bowl and whisk
Add dry ingredients and combine
Weigh balls into 70g and flatten them into pucks
Bake at 160 C for 12 minutes
Allow to cool and make the ganache
Combine cream and chocolate in a microwavable jug and melt in the microwave for 30-second bursts.
Pour ganache onto cookies and sprinkle m&ms on top
Allow to set
