Burnt basque cheesecake
Ingredients
500g Philadelphia cream cheese
3 1/2 eggs
200g caster sugar
1/2 tablespoon of plain flour
100ml heavy cream
Method:
Preheat oven to 210C and grease and line an 8 inch round tin. Making sure the parchment paper extends well past the edges of the pan for easy removal.
Combine all ingredients in a bowl and whisk until smooth and lump-free.
Pour mixture into the prepared tin and bake for 40 minutes until cheesecake is just cooked through and the outside edges are caramelized.
Allow the cake to cool and then place in the fridge preferably overnight.
Remove cake from the fridge and take off the parchment paper, cut, and enjoy.
